José Versini is a man of passion and conviction. For thirty-six years, he has devoted himself to farming. By family tradition, José chose to settle in his home village of Cristinacce after completing his studies in 1978.
" Being a breeder has always been an obvious choice for me," he confides. I knew that setting up a business was going to be difficult, especially when you're just starting out! But it was inconceivable for me to give up and become something I didn't aspire to be." Initially, the young man opted to raise goats and pigs. But the small herd of goats turned out to be perfectly unruly! José preferred to part with them and, in 1984, he decided to concentrate exclusively on raising pigs - as well as a few cattle - and processing them into charcuterie and terrines. "The quality of our products testifies to our determination to master the entire production chain, with real know-how.
José is not alone in this adventure. He is assisted by Nicole, his lifelong companion. A teacher in Germany, Nicole went back to school and trained as a beekeeper in Corté.
In 1984, with her diploma in hand, she set up her beehives and produced a generous honey, with the Appellation d'Origine Protégée label. She also makes delicious home-made jams. "To each his own season!" enthuses José. The workshop is busy all year round!
