Cyril Pompeani chose to revive a plot of his village's communal chestnut grove to produce the traditional Corsican PDO chestnut flour. Marignana, a small mountain village at an altitude of 800 m and a popular stopover for hikers on the Mare è Monti, is also renowned for its majestic chestnut grove.
He cleans three hectares* and maintains them using a combination of traditional know-how and modern techniques. Rehabilitation of the soil and trees, manual harvesting, traditional drying on wooden racks (the drying room is on site, under the chestnut trees), sorting and baking, before the final operation at the mill... this is the meticulously monitored production process on which the quality of the flour depends! Strength, patience and courage... it's fair to say that these values passed on by our "memory tree" are still relevant today, for a production of around 800 kilos of pure, fine, fragrant flour!
And to diversify, Cyril and his family are starting to produce home-made jams, based on figs, plums and, of course, chestnuts... For the moment, these products are sold at various retail outlets and rural fairs. In the near future, a reception area will be opened on site, where you can sample the Pompeani family's delicious products.
